Peanut Butter N Oatmeal Balls

Today, we are going to have a treat, literally! :-) I am going to share a recipe for yummy Peanut Butter and Oatmeal Balls. It is healthy and delish!

I am trying so hard to choose healthier options for my family and with a tight budget it is very difficult, but little by little I am learning to make better, healthier choices for us all. One thing I am seeing clearly is that you PAY for convenience! I know you are thinking, duh, I already knew that, but when you really start looking at what is in your grocery cart, you will see what I mean. The more the manufacturer has to do to get the product to you, the more you pay. If you go out and buy all organic food you will be spending a TON (believe me I have price checked). But, you can start buying the items you need to prepare your food from scratch and it will surprise you the cost comparison. Don't misunderstand, there are many items that I would LOVE to purchase organic or whole, but there is simply not enough money for me to do that (grass fed beef, raw sugar, coconut oil in bulk, etc).

So here's to taking it one step at a time...

Ingredients
  • 1 cup of Oats
  • 2/3 cup of Coconut
  • 1/2 cup of Peanut Butter
  • 1/3 cup of Flax Seed
  • 1/2 cup of Chocolate Chips
  • 1/3 cup of Honey
  • 1 tsp. Vanilla
Instructions
Mix all ingredients together

Chill in the fridge for 30 minutes
Get messy and roll into balls


Keep in air tight container in refrigerator.

Ta-da! This recipe can be adapted so easily. I have tried it with peanut butter and chocolate chips, you can add nuts, wheat germ works instead of the flax, the possibilities are endless!

  1. These look good! I bet I could make them with Soy butter and Vegan Choc. Chips for Connor....He loves stuff like this that can be so easily adapted to fit his food allergy needs! ~ Lisa

Super Mom!

(I'm using an old pic today because I couldn't get a new one to upload~ugh computers)  As I sit and write this post I feel on the verge of screaming, crying and pulling out my hair.Yesterday was our first day back to school and our first day getting back on the potty training schedule. This thought has been on my heart all week, faith without fear. How many times have you stepped out on faith and noticed the trembling inside as you shook with fear? Isn’t it a scary thing to obey the Lord and take that step of faith?
